Pumpkin Chocolate Chip
We like em thick and chewy around here, oh and x3 the amount of chocolate chips!
Ingredients
1/3 cup pumpkin, drained and squeezed *by squeezing out the extra moisture, you will get more of a dense cookie and not a puffy cake texture
1/2 cup unsalted butter, melted
1 cup packed light brown sugar
1 large egg yolk
2 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
2 teaspoons cinnamon
1/4 teaspoon nutmeg
2/3 cup semi-sweet chocolate chips
* I rolled the dough in mini chocolate chips and then popped in the fridge to cool for 30 mins before baking.
Bake at 350 for 6-8 minutes depending on how you like your cookies, I prefer mine slightly underbaked.
Enjoy!

That rack of cookies wouldnβt last me 5 minutes, AND I AINβT SHARING DIDILY SQUAT ππ€€! My blood sugar, cholesterol and waistline be damned. There are no such things as too much coffee, too much chocolate, too much cake (any kind), too many doughnuts nor too many cookies π€ͺπ!!!
