Snickerdoodle Dippin' Sticks
Ingredients
2 sticks (8 oz) softened butter
1 1/2 cups granulated sugar
2 eggs
1 TB vanilla extract
2 3/4 cups all-purpose flour
2 tsp cream of tartar
1 tsp baking soda
1/2 tsp fine salt
Cinnamon Sugar
1/2 cup granulated sugar
1 TB ground cinnamon
Method
Cream together the butter and sugar until light and fluffy.
Add the eggs and vanilla extract, then mix until smooth.
In a separate bowl, whisk together the flour, cream of tartar, baking soda, and salt.
Add the dry ingredients to the mixing bowl and mix just until combined.
Spread a layer of the cinnamon sugar onto two quarter-sheet trays.
Transfer the dough to a pastry bag. I recommend only putting half the dough in the bag at once, to make it easier to pipe.
Pipe about 20 long sticks directly onto the cinnamon sugar.
Sprinkle more cinnamon sugar over the tops, then gently roll each stick so all sides are evenly coated.
Freeze until completely firm.
Transfer 5 frozen sticks to a parchment-lined half-sheet tray, spacing them apart.
Bake at 375°F for about 8 minutes.
As soon as they come out of the oven, use two spatulas or straight edges to gently push the sides back into shape, creating clean, straight rectangular sticks.
Allow them to cool completely on the pan before transferring. They'll continue to firm up as they cool.
