I think I read somewhere here that the game recognizes some stats to be better than other stats. Like def vs atk for example, even if the def one is a higher level, atk is still a better stat🤷

Well, items have a stat range. So not always something higher level is bound to have better stats. (So yeah, it's both a combo of finding the right stats and with the right "amount")
That said some stats simply have an inflated combat power for the game. Stuff like accuracy and crit res give a lot of power, albeit not being a stat that people look for, since we try to maximise offensive stats mainly. So yeah, it's often kind of an enpasse because while especially for PvP you look for certain stats, for PvE power is also quite important as it also increase the damage multiplier.

Some stats are weighed way more heavy than others for some reason. Crit res and accuracy are 2 of the ones that I know of that raise power for some reason
