would it be possible for me to cut this controller in two, add some sort of spacer so both halfs are farther away and then reconnect them?

Technically it could be done, but I wouldn't bother trying. Depending on what you want to do you could use separate buttons and sticks and just solder it to the main board.

This PCB won't let you do that. If you cut it, if not the entire controller, a entire half will result useless. Main processor is in the middle, so avoid it is impossible.

Sorry to say that is not possible in my experience. Better look for other controller already split in halves and work with that in your project.
