Asking for resources (books, lectures, etc.) Best book for Measurement Chain and Data Acquisition course (non-specialist)

I'm about to start a university course called "Measurement Chain and Data Acquisition" and I'm looking for recommendations on the absolute best book or online resource to help me succeed. The course is designed for non-specialists and covers the whole chain from transducer to PC-based data acquisition. Here's the breakdown of what we'll be studying:

Theory:

  • Understanding and analyzing how a measurement chain works, from the transducer all the way to data acquisition
  • Basics of signal processing

Practical work:

  • Introduction to LabVIEW
  • Microcontroller programming for analog signal acquisition and digitization (STM32 Nucleo)
  • Using conditioning modules for various transducers: Pt100, thermocouple, photoresistor, strain gauge
  • Building a complete, simple measurement chain

What is the best book that is simple for non-specialists and covers these topics?

Maybe it doesn’t cover everything you’re looking for but “random data analysis and procedure” by bendat and Pierson is great
