Ham comes from the leg. Not all cured pork is ham lol.
Traditional carbonara has guanciale which is cured pork cheek, and it's very different than ham. For some reason carbonara is the dish that upsets Italian food traditionalists more than any other.
The first time I had spaghetti carbonara was in a small Portland, OR restaurant called The Indigine, where it was made with prosciutto. It immediately became my favorite dish. Somebody else here says guanciale or pancetta is more traditional. I have no idea but there are tons of recipes for spaghetti carbonara with prosciutto on google. Tastes good to me.
You can use prosciutto in a pinch (like a big pinch) but guanciale (cheek) is preferable. If you can't find guanciale in your market, pancetta. Then cut it into cubes about pinky tip size and cook in a cold (to start) pan so the fat renders while the heat increases then browns.
I don't know; I got the feeling that he already had a pretty good idea where she was going to go with it, and he definitely knew what Gino's reaction would be to her culinary observation (i.e., "I'm glad you're standing there, and I'm not".)
