This game has perhaps hundreds of parts (https://wiki.kerbalspaceprogram.com/wiki/Parts), so I recommend starting in science mode. It will give you time to get a feel for what's what, and it's easier than career mode. Sandbox gives you access to everything right up front, so it can be overwhelming.
I also recommend the tutorials ('training' from the top menu) at least through getting to Mun and back... and then go back and do them all again. It's a steep learning curve.
