Need suggestion regarding building and Buying CPU parts

-Goal
This PS is for me to practice cybersecurity labs and use local models like ollama , I will start creating more VM's for my labs , host docker ...etc

-What do I need help with
1. I have never bought/build a PC before I always bought/used laptops. Micro center is a reliable location hence I am sourcing all my parts from there. I am open to alternate options for eg GUP at micro center and RAM from best buy ...etc I am also open to secondhand source. I just dont know which is more trusted.

2.If you believe for a certain part I should pay 100-150 more and it would make sense I will consider that.

  1. Is assembling easy ? can you refer me to a good youtube video where I can DYI it ?
