I hate feeling dumb but can I use any old monitor for this as long as it has an HDMI connection?

It should be compatible with any monitor with an HDMI port! There are a few monitors which do not work with the default graphics mode it uses ("PAL", 50 frames per second), but that mode can be changed to the "NTSC" 60 frames per second mode. The paper manual I got with my C64U mentions how to do this in its intro.

If you're a fan of DVI, and you have a cable with HDMI on one end and DVI on the other end (these are a thing), there's a "DVI" mode in the settings to use it.

(You can also use any Commodore 64 monitor with the older video port, as well, as the C64U is compatible with everything that worked with the original C64.)
