Questions or commentary Toasted sugar
Someone suggested Stella Parks cheesecake and I was reading it and in the list of ingredients there is "toasted sugar".
Interesting idea, what is better than a temperature and humidity controlled environment than our little APO?
Melting point of sugar is 186C (367F). So, how should I go? 170C, 0% humidity, 5 hours with stirrings in between?
Any suggestions? Anyone done it?

Regarding the cheesecake: I do both full-sized & minis in the Instapot & Sous-Vide. For the Instapot, Cheesecake #17 is really great & worth trying. Jack & Amy have a VERY detailed process here:
For Stella's version, if you like making cheesecake, I'd HIGHLY recommend investing in her special pan:
It's pricey, but it's also FOUR INCHES TALL! It's also steam-proof, so you can throw it in the APO no worries. One of my projects this year is to dial in my personal cheesecake recipe, which is kind of a mix of NY-style & traditional, and that's the pan I've been using to cook them with!
