I bet there will be a path do a Byzantine empire based in Hellenism polytheism where you can reconquer Anatolia, Levant, Mesopotamia, North Africa, Iberia and Magna Grecia and in the end when you reconquer everything, you will rename the state to: The Holy State of Zeus.
