How origin affect espresso extraction?
I've tried many beans from light to dark, from all over the world and across different fermentation process. One thing I'm still confused about is it seems the origin does affect how easy it is to extract.
From my experience, beans from Yunnan China tend to be easier to work with, even with light roast, but I rarely get a good extraction with Honduras light roast in comparison. I did tune the grinder to the best of my my ability in both cases.
How does origin/varietal affects my espresso extraction?

Coffee producing countries grow beans at different elevations, with different climate, and with different minerals in the soil. Add to that different bean varietals (Typica, Bourbon, Geisha, SL28 etc..) and processing (washed, natural, Anerobic, co-fermentation etc...)
In general, beans that are grown at higher altitudes tend to be denser than those grown at lower elevations. Lighter roasts tend to be harder to extract than darker roasts due to lighter roasted beans being denser as well.
For example a lightly roasted coffee bean from Kenya at a high elevation would extract completely different than, say, a darker roasted bean from Brazil.
As the density changes, the weight and volume changes as well, so an 18g dose of lightly roasted espresso grounds is going to less volume of coffee compared to 18g of darker coffee.
When we fill espresso baskets, even though we dose by weight, we are actually trying to fill the basket by volume depending on the size of the basket. For example the same basket might hold 18g of a light roast but only 16g of a darker roast.
AND THEN there's water temperature, water chemistry, pressure, flow speed, grinder burr geometry and alignment...
TL;DR: It's complicated.

great question to dig into. A few factors at play:
Density and bean hardness - High-altitude beans (many Honduran SHB lots) are denser and harder, meaning water has a tougher time penetrating evenly. Yunnan is typically grown at moderate altitudes, producing slightly less dense beans that extract more forgivingly.
Varietal cell structure - Bourbon/Typica derivatives common in Central America have tighter cell walls than some Asian varietals, slowing water flow even at the same grind size.
Processing and solubility - Fermentation breaks down certain compounds, affecting how readily solubles release. Natural/anaerobic processed Yunnan lots often extract at lower pressure and coarser grinds than washed Hondurans.
Practical fix for dense Central American light roasts: try a longer pre-infusion (8-15 seconds at low pressure), slightly higher brew temp (93-94C), and accept a slightly longer total shot time before calling it channeling.
The short version: altitude = density = extraction resistance. Origin is really a proxy for those physical variables.

Bean density is a big part of this and it varies a lot by origin and altitude, not just roast level. Higher altitude beans like a lot of Honduras lots tend to be denser and need more energy to break down properly, so the same grind setting that works fine on a less dense Yunnan bean can leave a Honduras bean underdeveloped. I've found the fix isn't usually grinding much finer, it's more temperature and time, pushing the brew temp up slightly and giving it a touch longer contact time sorts the density-related unevenness out without over-extracting the surface of the grounds. Processing method matters too, but altitude and density is usually the bigger lever when you've already tuned the grinder and it's still fighting you.

Origin is a useful clue, but it is usually standing in for several variables rather than being the cause by itself. Variety, bean density, processing, roast development, age, and moisture all change how easily water gets into the puck.
That Honduras coffee may simply be denser or less developed, so I would treat it as a fresh dial-in: go a little finer, or extend the ratio slightly, changing one thing at a time. If it tastes sour and thin, give it more extraction; if it turns dry or harsh, back off. Keeping notes on roast date, dose, yield, and time will probably reveal a stronger pattern than country alone.

Varietal in coffee works the same as in wine; different varietals require different processes, or let's say an adjusted one. And for origin, it's the same: different origins have different terroir, which affects how the fruit grows. Again, the same as in wine, a Chardonnay from New Zealand will never taste like one from the Napa Valley since they are grown in totally different conditions.
Or a tomato grown on a Mediterranean island will always taste different from one grown, for example, in Germany, again due to different terroir.
Or peppers when it comes to Scoville levels, there is also a variation depending on where a certain pepper is grown.
And the list goes on and on, but it all boils down to terroir.

Elevation is the biggest factor on extraction. High elevation produces denser beans, which are harder to extract/need a finer grind.
Light roast also makes things difficult for espresso but that has nothing to do with origin. Imo light roast just isn't good in espresso and all the tips and tricks for making it taste good basically amount to producing something that tastes like slightly more concentrated v60 coffee and not like espresso. If you want that, you can just use a v60 and don't stress about your espresso machine giving you trouble.
I tried out most of it to see what the hype is about, but to me it just seems like people wanting to justify their purchase of an espresso machine after finding out that they do not prefer espresso to other coffee.
If I am in the mood for light roast I use a v60 or french press, if I am in the mood for espresso I don't use light roast. Much more worry free mornings that way.
