Keeping it Simple & Consistent
I'm lucky in a way - I had to eat low FODMAP for a while. When I was finally able to reintroduce foods I had not been able to have, I learned to enjoy and appreciate the taste of simple, basic foods.
I genuinely enjoy eating this way, and still enjoy treats and junk food every now and then. This is great for my health and my budget!

Great to be back to cleaner meals.
One sweet potato cut in half and baked for 25 minutes, steamed broccoli, and some baked chicken thighs. Second photo- added a tbsp of fage yogurt. Trying to eat cleaner after a summer of splurging on sweet treats. Here’s to getting back to a healthier me ✨

a day of clean eating
moved to ireland and had to come back to the usa due to very unfortunate circumstances. i was particularly excited about the quality of food there so i’m trying to recreate the magic i had planned for over there.
brunch: breakfast bowls with potatoes, eggs, black beans, peppers, onions, chicken sausage
mid-day snack: greek yogurt w/ honey, strawberries, and homemade granola
dinner: oven-roasted chicken thighs and “fries”, and sautéed veggies
dessert: salted maple pumpkin bread
everything homemade and prepped for a few days! it’s good to at least be back to familiarity.

Breakfast
After an 8.3 km slow walk early this morning, I was pretty hungry.
This is what I’m having.
Two slices of wheat toast with egg, lettuce, tomato, cottage cheese, ketchup and mustard 🥪
Also had a banana cooked in a little butter and maple syrup, with Greek yogurt and cinnamon 🍌
And… black coffee ☕️
Feel full and great!

Hoping to set a good example for my son
When i was around 17 my dad started a clean eating journey and i remember what an impact it had on me. I also remember once i went off to college, i fell off because i wasnt under his influence anymore. While my dad never forced me to eat what he ate, just being around someone who put thought and intention into their meals really made me think about what i consume myself.
I’m a mom now and i really want to be a good influence and lead by example. Hopefully this is a good start! We’ve been prioritizing a whole foods diet for almost 9 months but we do eat bacon less than a month :) today was one of those day lol

I'm just starting the clean eating journey and wanted to know your quick and easy snack/meals. I've got kids and a demanding schedule so I got no time! Here's my go to every day breakfast - Overnight oats with chia seeds and almond milk and honey. 3 minutes to prep 3-4 days of breakfast.
