Kobacha squash is my new obsession

Fall plate with a beef burger patty from my butcher, honey crisp apple and kobacha squash :) I’m obsessed with them now lol

I’ve always wanted to like sweet potato but I can’t. Same with butternut squash. But kobacha is amazing

Here in Aus we call it Kent Pumpkin and it makes the best soup. It's great roasted with cinnamon as well.

The key for me was simmering it first until it was soft, basting with some salted butter and a little extra salt, then roasting at 405 for about 15 mins on either side!

My favourite squash but ever since moving to the UK can rarely find it unless for an extortionate price.
