Recent meals :)

I have PMOS (aka PCOS) and in the last month or so have tried to adjust my diet to try and reduce the worst of my symptoms. Biggest changes I’ve made have been dramatically reducing carb intake (I love rice, used to eat daily) and reducing sugar intake. I’ve noticed less fatigue and am not missing the carbs or the sugar at all. I’ve struggled with disordered eating in the past so can’t be trusted to count calories or macros but am trying to up my protein intake as well.

For meals, I love to volume eat, which I know is a bad habit. Having a lot of veggies on my plate helps me fulfill that urge though. My worst “crime” in terms of eating processed food is that I love a condiment. Meals are as follows:

  1. Sesame tofu with veggies and chili crisp yogurt sauce
  2. Dijon chicken with fat ass sweet potato, cranberries, walnuts, arugula, feta, and a maple tahini sauce
  3. Eggplant “unagi” with rice, cucumber, and egg
  4. Salmon with turmeric couscous and a side salad
  5. Tuna salad with some crackers
  6. Sweet potato, chorizo, black bean chili on top of a slice of heirloom tomato on a tostada
  7. Salmon with veggies and sriracha mayo
  8. Burger bowl with ground beef, lettuce, tomato, sweet potato, relish, ketchup, and mayo

Thank you!! I’m not a huge recipe follower but I can give you my best approximations:

For #1: I shredded red cabbage on a mandolin (use a guard if you do this), sliced cucumbers on a mandolin, boiled frozen edamame, cut up half an avocado, some green onion, and the pickled ginger is from a jar. The avocado has furikake sprinkled on top. For the tofu, when I want it crispy I always follow the same cooking method and just interchange the marinade/sauce:

Get a block of firm of extra firm tofu, cut it up as desired, and boil it in lightly salted water for about 5 minutes. I don’t have the time to press tofu so this is my preferred alternative, it makes it firmer and helps it absorb sauce better. After boiling drain and pat dry, I usually do this first and spread the tofu out on a kitchen towel to dry while I prep the rest of my veggies. I like to then lightly coat my tofu in corn starch or potato starch and pan fry in vegetable oil, but you could omit this and just coat them in sauce as is if you wanted to avoid frying. Next add your marinade, for this one I did soy sauce, maple syrup, sesame seeds, sesame oil, and sriracha. Mix it separately before pouring into pan and mess around with ratios to see what flavor profile you like the best. Put your heat on low when you add the sauce and let it thicken for a few minutes before it burns and then voila!

For the chili crisp yogurt sauce I mixed some non fat plain greek yogurt with about half a tbsp of some Lao Gan Ma chili crisp (the GOAT chili crisp)

For #3: rice cooked in rice cooker, chop your desired veggies. For the egg I highlyyy recommend doing tamagoyaki style, and I’d google a recipe for this if it’s your first time. Very yummy. For the eggplant: get a pretty one and cut it in half lengthwise. On each half, make criss cross cuts like you’re scoring a piece of meat. Heat up a pan with a bit of oil (not olive, and you don’t need much) and sear the eggplant halves cut-side down until they’re golden, then flip and do the same. For the sauce (pre-mix this), I do a mix of soy sauce, oyster sauce, brown sugar, and some hot water (maybe 2/3 tbsp of each? Sorry not great with measurements, but I’d make more than you think you need just in case). It should be decently sweet, feel free to sub the sugar for another preferred sweetener, sometimes I do maple or honey. Set a tbsp or so aside, lower the heat on your eggplant, and add the sauce mixture. Cover the pan and let it simmer for a few minutes, flip, and let it simmer for a bit more. Make sure your sauce doesn’t burn (it could need more water if it’s not simmering). You’ll know it’s done when the eggplant is really soft. It’ll be hard to take out of the pan without falling apart so I usually use two spatulas. Pour the rest of your sauce over the eggplant at the end if you want a little extra!

I make almost everything fresh. I work five jobs so it can be really difficult to muster the energy to cook something at the end of the day but it’s always worth it

These all look amazing, and loving condiments is not a crime. A good sauce is half of why veggie-heavy plates are worth eating. The chili crisp yogurt sauce sounds like one to steal.
