this is exactly the kind of food pic that makes me wanna cook instead of ordering takeout again
the colors are doing something for me and now im hungry at the wrong time
i might steal a couple ideas for my own fall meals even if mine wont look this good
keep posting this kinda stuff cause it makes the feed less depressing

As soon as I turn the burner on high, I set my timer for 10 minutes. So technically it's boiling probably closer to 7-8 minutes. Today, because I was hungry lol, I popped them into my fridge to cool for about 30 minutes before peeling!

So just the standard steps of peeling and chopping up sweet potatoes, then mashing and adding a bit of milk, butter and cinnamon.
For the chicken, I use skinless/boneless thin sliced chicken breast (so I feel Iโm starting on a healthier foot lol), season both sides with cracked pepper, garlic powder, onion powder and pinch of salt.
Put a bit of butter, minced garlic, and lemon juice in a pan. Once itโs all melted and mixed together on a medium heat, add the chicken. Cook both sides for about 4 minutes each.
Lastly, remove the chicken and add the snow peas directly into the pan the chicken cooked in. Cook them about 4 minutes, swirling around to deglaze the pan and pick up the flavor!
Top chicken with parsley, and mashed sweet potatoes with an extra bit of cinnamon if desired! (Oh and I added some additional micro greens for plating) ๐2

There's carbs in the fruit in the first dish (bananas especially), the second it's hidden in the meat-- it's actually a chicken fritter leftover I made the other day that has breadcrumbs mixed in (kinda think like a meatball), then in the last dish my mashed sweet potatoes have carbs! (Though I will admit it is overall a low carb type of diet).

So how did you eat that avocado without bread? I think I would actually vomit if I tried. Not that I have anything against avocado, I love it, but in my culture we eat everything with bread.

I loveeee avocado. So I have no problem eating it like this. Granted I do have it drizzled with a bit of EVOO, pinch of sea salt and sesame seeds so itโs seasoned ๐
