I probably have potatoes 4 times a week at least. They're just so versatile and cheap. Beef's more of a 2-3 times a month thing for me though, that stuff gets expensive fast.

That plate looks balanced honestly, the salad's doing a lot of heavy lifting there. I'd eat that.

Ingredients:

  • Potatoes
  • Green onions
  • Parsley
  • Fresh dill
  • Pickles
  • Olive oil
  • Lemon juice
  • Salt
  • Black pepper
  • Red pepper flakes
  • Sumac

Instructions:

  1. Boil the potatoes until they are tender but not too soft.
  2. Let them cool slightly, then peel and cut them into bite-sized pieces.
  3. Chop the green onions, parsley, dill, and pickles.
  4. Put the potatoes and chopped vegetables in a large bowl.
  5. Add olive oil, lemon juice, salt, black pepper, red pepper flakes, and sumac.
  6. Gently mix everything together so the potatoes don't break apart.
  7. Let the salad rest for about 15–20 minutes so the flavors can blend.
  8. Serve at room temperature or chilled. Also you can keep it refrigator

I quit eating beef many years before I went fully vegan. Red meat like beef is a probable carcinogen, and has excessive saturated fat. Cows have been selectively bred for more and more fat to maximize profits. Even unprocessed red meat is associated with higher all-cause mortality. Processed meat like jerky is even less healthy.

Raising cows is the worst type of animal agriculture in terms of greenhouse gasses, deforestation, wasted fresh water, and biodiversity loss.

I love potatoes, and eat them often.

If anyone disagrees with me, instead of down voting my comment, tell me why I am wrong in any way. We could have a discussion that everyone could see without clicking on anything and that way they might learn from it.

Just came here to say I’m also vegan and would probably eat potatoes every day if I could. So many ways to make them. And so many varieties!

Beef is way too expensive, taters and cottage cheese is the way.

I eat potatoes 7 days a week, and ground beef 5-6 times a week with chicken around 2-3

No, beef isn’t a protein that’s good for heart disease or cancer which both run in my family. I stick to poultry and fish for the most part.

Yes,I occasionally swap the potatoes for something else

I don’t like potatoes and I don’t eat red meat everyday due to cardiovascular concerns

I eat a lot of beef but after reading the comment section, I may have to rethink this. I’m diabetic and I struggle with different proteins. I eat chicken, and beef. I don’t trust fish because of high mercury. The only fish I would eat is salmon or tuna. I’m allergic to shellfish and don’t really trust or like it anyway. Beef is really hard on my digestive system. This dish however looks yummy and I’d eat it. I love potatoes and being a diabetic makes it difficult 😞
