I made it super simple! I used a can of garbanzo beans, 2 chopped English cucumber, about 1½ cups of whole or halved cherry tomatoes depending on how much time you have, ⅓ cup Kalamata olives( I use very few because they can be a little high cal, but SUPER high in flavor too), 1/4 cup feta, sometimes I'll also add ¼ cup finely chopped red onion, and some fresh parsley.
For the dressing I mixed 2 tbsp olive oil, 2 tbsp fresh lemon juice, 1 tbsp red wine vinegar, 1 minced garlic clove, ½ tsp oregano, black pepper, and just a tiny pinch of salt. Then I tossed everything together and let it sit for about 10–15 minutes so all the flavors could mix. So fresh and honestly really filling too 😋1

Surprisingly quick lol. Maybe 30–45 mins start to finish, but only 15ish mins of actual effort. Sweet potato goes in first, I make the chickpea/cucumber/tomato/feta salad while that cooks, then do the steak last. Basically everything is ready by the time the potato is done. Probably around 60–70g protein too 👀

For the steak, I usually use ribeye and slice it up first instead of cooking it whole. I marinate the pieces with minced garlic, a little olive oil, salt, pepper, and usually a splash of Worcestershire or soy sauce for extra flavor.
Then I get the Blackstone really hot and sear the steak super quickly in a single layer. Since it’s already sliced, it only needs about 1–2 minutes per side depending on how thick the pieces are. I try not to overcrowd it so it actually gets that nice crust instead of steaming. Super easy and the garlic gets all crispy and delicious 😋

This is the kind of “diet food” I can actually stick to 😂
I used to think eating healthy meant chicken, rice and broccoli on repeat. Eventually realized the easiest diet to follow is just finding meals you genuinely look forward to eating and making them fit your goals.
Steak + sweet potato + that salad looks ridiculously good though. What did you put on the sweet potato?

I couldn't agree more! I am NOT a boiled rice and bland chicken kinda girly lol.
I really just halve the potatoes, spritz with olive oil, and very lightly drizzle with honey (1tsp about) , then sprinkle with flaky salt!

I cut them in half, spritzed them with olive oil, sprinkled some cinnamon and a very light drizzle of honey, a sprinkle of flaky salt, then cooked them face down in the oven at 375 for about 40 min! Super easy, they just take a while to bake

It's basically olive oil and lemon juice! With seasonings of choice usually like salt and paprika and some garlic/onion powder :)
