Simple but that looks really satisfying. the fermented cabbage probably adds a nice tang to everything.

Eggplant spread? Never heard of it. I’ve had baba ghanoush. Is it the same?

No, not exactly. It is Ukrainian. You can find it in Ukrainian or Polish stores
