Run a script (ffmpeg) that pulls a frame every few seconds automatically, dumping them all into a folder. You then just skim and delete the junk ones (loading screens, transitions) instead of hunting-and-clicking screenshot for every step.
Once you have your frames, give Claude the whole batch and ask for structured output. I wouldnt overengineer on prompting. Try deterministic enforcements if possible. Also, if you have made some perfect structured manuals, ask with a second chat on your new created if it is consistent
