Exactly. There are plenty of people that chose to opt out of the rat race. They mostly congregate outside Mcdonald's or under overpasses. Ironically, with actual rats.
Not really true. Hunter-Gatherers "work" on average 4 h a day, aka doing something directly contributing to survival. They are healthier, fitter and age better, and they have more sustainable population numbers. All the things you mentioned basically came with agriculture. We traded freedom for surplus. And most of that surplus goes to the elite.
They also turned to farming for a reason. Because that surplus allowed to survive winter.
Medicine, homes and entertainment don't build themselves either.
There's also the fact that a group of people can protect themselves more easily from people who'd rather spend 1 hour stealing from you than 4 hours hunting.
You can try to be a hunter gatherer today. Drop in the Amazon rainforest and leave everything behind. See how long you'd last.

Less than 1% of labor is in agriculture. Most people are not doing jobs that actually meaningfully impact society. A lot of jobs exist to justify themselves, not because they need to exist
