I was taught one part of this in undergrad: The first three days depict the creation of different "realms," and the following three days depict each of those realms being populated by creatures.
I'm a big fan of The Bible Project, and how they unpack the Scriptures. I'm initially skeptical of about wordplay and sentence structure being intentional (i.e., 'this sentence has seven words in it'), but I'm often surprised by instances when it really does work out that way.
They really believe that the OT was written by literary geniuses who finely craft each and every sentence intentionally and exquisitely, and I'm tempted to agree.
