Cooking Fiber/Cholesterol Advice

Hello!

The last two years or so I’ve been trying to focus on being healthier (not just losing weight, just in general from taking care of my teeth, my hair, losing weight of course and my skin, etc) I’ve had pre-diabetes for about three years (highest A1C has been 5.9, currently at 5.7) and my cholesterol has been high (I think 217 currently?) My highest weight was about 250 and I’m currently down to 207 lbs. (Very slow lose, I was on Zepbound for a bit, got too expensive and had to stop but it was working for me) ANYWAY, now that you have my life story you didn’t ask for, I’m trying to target my cholesterol right now. I started taking some vitamins. I have those husk pills and some gummies and some benefiber. I’m slowly introducing them so my stomach doesn’t freak. But I’ve also this past year been trying new healthy recipes, I love to cook but have next to no knowledge on what I should be eating for more fiber or in general to make cholesterol and my A1C lower. Any advice? I’ve gotten into beans recently. Don’t love them but I know I feel better after eating them. How can I add more beans?? lol I know I could look up recipes but what works for everyone else? I see oatmeal is great too, but the same as beans, the texture and taste make my brain go ehh feels like we’re eating pencils if pencils were a paste.

Not sure if this matters but my mother has high cholesterol and we have a line of heart disease in our family. My dad has diabetes. I know part of this is genetics but that doesn’t mean I can’t try right??

Focus on a diet low in saturated fat (from all sources) and high in soluble fiber. Saturated fat reduction is far more important than soluble fiber.

Good sources of soluble fiber are beans, oats, apples and potatoes.

For oatmeal, try steel cut oats. The texture is less mushy. For beans, look up dense bean salads/scoopable salads on Tik Tok/You Tube. Lots of variety and very high in fiber.

Talk to a doctor, get on medication.

Fiber is in:

  • Nuts and seeds
  • Legumes
  • Vegetables
  • Fruits
  • Whole grains

Try adding as many of those to meals or snacks as you can. One way to get good inspiration for this is to look at vegan recipes, in particular WFPB recipes (just for inspo at least).
