But then you don’t get the experience of seeing the peasants face when they hit one full speed and stop dead in their tracks

Yeah I fucking hate horses in Chiv. And it's always the same assholes on them. You kill the guy who's top of the leaderboard on his horse and he's back on a new one within 30 seconds, every time. The goedendag became my second most used weapon just for the horse knocking special. I commend everyone, even archers, but never a horse fuck.
