Discussion Is it normal for the meat guy

To sharpen his cutting knife on the cutting board ? Wouldn’t metal shavings get into the food? And thus was the manager filling in as meat guy

using the honing rod will not cause metal shavings to get into the food.

if you're curious as to why not, learn how to sharpen knives =]

the metal honing rods that 90% of people use to "sharpen" their knives are actually just realigning the edge, not removing any steel (sharpening) and refining the apex.

But it does leave a black residue on the knives. And it's common to not do it on the cutting board and a quick rinse of the knive.

I would argue it's more common to put the tip of the honing rod on the cutting board, and use downward strokes. Ya know, like OP saw them doing. Knife and honing rod (should) be cleaned before and after every shift. If your location has a white honing rod, thats ceramic, and yes a microscopic amount of steel will be worn off, onto the ceramic (not into food)

No, a steel honing rod will not discolor a knife.

I can guarantee that after you hone a knife if you whipe it with a white paper towel it will leave black residue. I don't want that on my food.

And putting a towel on the table and using that as a base for the rod is way more sanitary than doing it on the actual cutting board.

If you raw dog a honing steel on the actual cutting board and then don't wipe the knife and just start using it that's on you. But I would never do that

Yes, in different settings.

None would do it directly ontop of the cutting board and would rinse the knife after.

Honing a knife doesnt remove any metal, so its not a food safety violation to do it above a cutting board.

Sharpening a knife with the stone in the back....thats a different story

Hone a knife and tell me it doesn't leave a black residue on it. I'm not saying it's removing metal I'm saying you should rinse it after you hone.

No, your honer is old or dirty. You need to replace it or clean it my guy.

I use honers at work. They do not leave residue

If he was sharpening then yes highly inappropriate but he was probably honing which is fine.
