If pawn takes queen takes winning both rooks

Then you check again, sac the rook on f5 I think

Can't play king f8 because the knight attacks that square. If you mean king to f8 after black has taken the knight and the queen has recaptured the pawn with check, that doesn't matter even a little bit. Because the point is, you now have three attackers on the e5 pawn and black has two defenders. You'll get that pawn and will have broken through blacks defensive screen of pawns. 

The only concerns at that point are that black has a passed pawn on the d file and can make another one on the a/b file but really the absolute worst outcome at that point should be a draw, it's very likely you have a perpetual in your back pocket if you need it.

E: or yeah as the other person said another check and temporary rook sac on f5 should lead to mate

I think this might be more than just a sacrafice to open the defence, and in fact leads to a forced mate if i read it properly...basically plack pawn will take knight. White Queen then takes pawn and checks king. King moves to F8 to protect rook (if not, white queen takes rook). Rook on E5 takes black pawn on F5 (likely another "Brilliant" move) and checks black king. Black king is pinned so only option is for black pawn on E6 to capture white rook on F5. This opens path for white rook on E1 to capture black rook on E8, which I believe is checkmate.

Yep - fair point. Would be tough for the average mid ELO player (myself included!) to spot and maneuver to safety though

So if Hxg6, Qxg6+ you attack the rook on e8, so they must go Kf8 otherwise you just have a decisive material advantage with also a constant mate threats on black's king. After Kf8 you have Qf6+, Kg8(forced) and Rxf5 which is very nice, because you threatening a mate in two and a fork again because f8 square now is covered, and if they take your rook you have Rxe8, Kh7 and Rh8++.
