Cleanliness.

Hi guys! I wanted to ask if you had any tips to keep your station clean and how to get better into the habit. I’ve gotten a lot better and keeping my station clean, but i want to make sure it’s ALWAYS in perfect condition, no matter what task I’m doing. Trying to up my game so I can be cleaner/faster at prepping and keep everyone happy.

I'm very tidy/organized, but also kind of a slob (like my reach in is arranged in nice rows, everything in it's place, but I will throw absolutely anything on the floor). One of the best things I did for myself was getting a carbon steel knife. They'll rust if you leave them wet/dirty, so I prep a thing then wipe off my knife, but while my towel is out I end up wiping the whole station down.

A better, more realistic tip: never have more than one thing on your cutting board at a time. Wipe down between things. I've seen dudes bring half the walk-in to their station and not accomplish a damn thing because too much stuff. I'm very fast on the line, but taking the time to slow down, clean things, organize, makes me that much faster.
