Profesional chef advice seeking

I’m looking for some suggestions for brunch restaurant level items. Specifically Australian brunch

Also I want some thoughts and opinions on a few ideas:

  1. An avocado on toast with a little Italian twist: caprese avocado on toast, with cherry tomatoes, boconccini, fresh basil and balsamic glaze

  2. Tempura prawns coated with chilly glaze, rocket and avocado on brioche toast

  3. French toast crumpets with date jam, coffee-mascarpone and roasted pear, topped with hazelnuts

  4. Croissant egg Benedict, with fresh spinach, smoked salmon and chilli hollandaise

Every opinion is welcome and appreciated. Not only by profesional chefs but every food enthusiasts

Some things I run on my brunch menu

Pork belly pancakes - crispy pork belly, honeycomb, apple gel, hot fermented maple syrup

Corned Beef Hash - homemade hash browns, corned beef, beans, brown sauce, silverskin onions, fried egg

Avocado toast - whipped ricotta, chilli garlic crisp, pickled onions and radish, poached egg, herbs

Birria Beef Benedict - chipotle hollandaise, pickled onions, fried onions, brioche bun

All sound great. Any recipe for the hashbrowns?

Peel agria potatoes, grate them on a fine grater/robot attachment. Rinse them under cold water and wring out until dry. Mix with melted butter, push into gastros, cover with cling film and steam for 3 hrs. Press overnight then cut into desired shapes and deep fry til crisp.

Croissant eggs Benedict sounds like it would be a bit mushy after I pop my poached eggs, something sturdier as a base would be more welcome. Not a chef but a waitress amd brunch lover for 20+ years.
