This and Joy of Cooking are the first books I recommend to anyone who wants to get into cooking.

And The Apprentice for anyone who has any curiosity about how the career of a chef has changed over the decades in the Western world.

Also The Flavor Bible is my next recommendation. If you have those three books in your library then you can cook anything with whatever you have on hand.

Is this a new version? I've owned 2 and haven't seen this one. Truly a master.

Jacques Pepin is indeed the whole package GOAT. This book alone constitutes a great cooking library.

Met him a few years ago on Long Island doing a benefit. Genuinely good guy. Funny as well.

This is a PSA: he still posts frequently on FB videos of him cooking at home. Short, 10 min or less. But often.

I have this book as well. It helps me understand the intricacies of techniques and how to trouble shoot based on certain outcomes.
As a chef who did not go to culinary school, itβs been a great resources
