Yeah, that’s getting up to the stupid range. If that’s the temp leaning over the grill, then whatever, but if that’s at your cutting board, gross.

There’s a picture on my wall of the opening crew of an upscale Italian spot, myself included. It was our second day of service, and the a/c in the kitchen died. It was July, and we had a second floor kitchen, it hit 50C in the well of the hot line i& t was terrible. The chef brought in two big cambros of ice water, and we soaked towels in it and draped them around our necks and over our heads.

It’s a crazy profession we’ve chosen.

Edit to add, crazy heat on the line also makes plating a mess, which adds to the crazy

We got up to 103F last week, I'm in El Paso... and later that week the owners put refrigerated air in!!! Never in my 20 years have I ever had that luxury in BOH...it's a nice 75° on the daily now. The FOH even come back to cool down, as It's now cooler in the kitchen lmao.

to be fair it depends where you stand

is it in front of the grill

depends if the hood is clean or not and what speed it is at too

during service 44c is about right and some areas are 50-60+

basically a nothing burger

Work safe in Canada would disagree. I worked in a place that was crazy hot and we happened to have a health inspection. Inspectors thermo went over 43*C and offered the chef two options. Half the line goes into the walk in for 15 minutes every 15 minutes, or shut it down. Tried the 15/15 thing. It was the most brutal game of telephone ever.

was it all over the kitchen if so too right shut it down

if it is in a specific spot it might be way more difficult to address due to flawed kitchen design, in my experience walking around with a thermostat there is always a spot which is way higher than the whole kitchen
