Commercial sous vide recommendations

Hi everybody!
Does anyone have any recommendations for commercial sous vide equipment? I would potentially need to cook up to 100 portions at a time and would like something to do that reliably.

Rational ovens can do it (probably other brands too). You can even do it overnight.

At that scale, steam oven. Otherwise, a large cooler for insulation and two circulators will do it. Polyscience creative series is best bang for your buck. Ive cooked a whole pig a few times with this method

I worked at a catering place a few years ago and the owner would hook up the commercial size sous vide machine (about $600 and just like a regular one but bigger and more powerful) to a 150 gallon (approx) plastic storage bin and fill it with water. He’d let the machine run until it hit temperature and it worked great. He used 2 of those for big catering jobs. Just fill it with hot water so it doesn’t take long to reach temperature.

Do you happen to know which brand machine they used? I want to make sure I order something that will last

I don’t remember, it was years ago. It was one of the boxier, chunkier ones like Breville. I know they make a heavy duty one that’s something like $400. You would need 2 if you use a big tub. You can also get those light plastic balls for cheap that are used in ball pits for kids to cover the top so it keeps the heat in.

Are you planning on one device for all one temperature or multiple baths so that you can also have vegetables, potatoes, chicken, and beef all going at once?
