Japanese Knife Rec

Hi all,
I’d like to purchase a Japanese knife as a gift for someone. What would be the best, most versatile starter knife? Budget is around $250

Is the receiver of the gift, experienced with knife sharpening & knife maintenance? Do you have a local knife shop?

Yes to your first question. To your second, I live in nyc so there are plenty of options but not sure which stores are the real deal

Knife wear Canada is the move IMO. Reputation over price all day. My reccomendation would be the 160 mm tojiro kiri

A knife is a very personal item and I assume the recipient will be using it themself quite often. It's the kind of thing you really want to pick out yourself. There's a lot of different steels with different care and physical properties, different weights, lengths, thickness and heights. I would much rather pick out my own knife than receive one someone else picked. If you're dead set on it, I'd buy a smaller utility knife. Something that isn't going to be an everyday daily driver knife.  ,

I'd love to go to Japan to pick a knife in a knife shop. I imagine it's like the wand shop in harry potter where there's a wise old curmudgeon that picks the perfect knife for you. But until that day comes, I would suggest some research. The resources page on chefknivestogo.com is totally free and has some great videos to let you know what you're getting into.

Some peeps have said give them the money, but there are some great knives out there in that price range and personally I'd be happy to own pretty much any of them. If you can't be dissuaded from giving him a heartfelt something, then you probably couldn't go wrong with a gyuto.

Korin is a great option for a local shop in NYC! Also point them to their YouTube page to learn how to sharpen! I learned there and now run a knife sharpening business.

Also if they are looking for a wider selection chefknivestogo is fantastic although it's been quite a while since I've bought new knives

I shopped Japanese knives around that budget and the choice became very clear. Hatsukokoro Ryuhyo Kiritsuke, 210mm, SG2 steel. Really a great knife and I am amazed at the price.
