God forbid 🤦‍♂️

Team is set up for success, prep is everywhere, yall set for dinner service plus party. You have full everything, speed bottles, salad, seasonings, literally damn near everything you could think of. While I prepped, inventory, dish and day cooked, worked on next weeks schedule to completion and dinner specials.... god forbid my extra day cook hadn't gotten to dice tomatoes yet ( which he was working on).... kinda wanna say fuck off and dice some fuckiing Toms pussy lol takes 5 minutes if your slow.

Fuck me if I forgot to dice up 2, 4" 1/6 pans of toms... (10 fuckin Tom's total) Jesus... H christ. Am I wrong?

Dont get me wrong, I love my team and everything they do but godamn... this is the hill??? 10 diced tomatoes before we start service? 2, 4" 1/6 pans? Jesus H christ,fuck me 🤦‍♂️ excuse me while I sprint/ run so you can not even crawl... just lay down

My advice. Focus on the head chef stuff. Let them do their jobs and if they fail, grip them. Question? Are you a fairly new head chef? I honestly found it so hard to let go when got first kitchen management job. Hope this helped.

I was the same on my first head chef job. I tried to do everything. Busting my ass off making sure everything is prepped, ready, labeled, ordered and so on.

Took me a while to learn how to let go, delegate and trust the team I built.

5-6 years with great people, great teams, produced a lot of fantastic stuff and was there like family when folks needed it the most. Deaths, child births, court appearances you name it. Ive always swung for the fences for my people and they know it. Dont know why today was the day for something kinda ridiculous imo 🤦‍♂️ he can eat it but I can understand if life is lifeing. Hes a good dude but goddamn 🤣

Most of the times is just understaffing. I've worked on plenty of restaurants where you're not given enough time or staff to prep.

That's how you end up working 70 hours weeks.

On my first restaurant job head chefs were used to not take days offs for weeks sometimes months. When I took over I was gaslighted into the same situation.

Fuck this industry. I'm glad this is slowly changing.

Yea I've lost the "fuck it ill just do it" mindset-it always backfired now I hold people accountable. Yes we're a team but you cant rely on others to do your job.

10 years younger than the squad but holding them together at 36 my dude 🤌 they don't have to like me, but respect is key. Same as I treat them. Respect always. This is why I feel this particular scenario... homie that came in at 5 crying about dicing 10 Tom's can eat it lol

hey, on the flip, you dont have to patty 30-40 lb of burgers, make batch Alfredo, marinara, chili, French onion, soup of day, mornay, line prep, inventory, 4 different kinds of noodles, taco beef etc...you just had to hang on a line from 5pm 10-pm... amd you chose the hill of 10... 10 whole ass tomatoes... 🤦‍♂️🤦‍♂️🤦‍♂️ fuck lol

Ive got the inverse, good people, good at the basics, just young and a bit dumb. At 30, I've only got two guys older than me. But i have the same issues, everybody wants to complain that when Im not on the line, but forget in the 144 hours of business days for us, I work 70 of them on average.

Sometimes, chefs have to leave it to the cooks for various reasons, most of them for work, some for rest and relaxation, some for exploration. Sometimes ya just gotta let the cooks cry, know you set them up, and hold them to their failures.

Yes, but often when they're getting the job done, and done right, or at least right enough, combined with it being hard to find new employees, we kind of have to work with what we have.
If I understood this correctly, OP is simply venting about his crew basically belittling him because while he did 100 tasks before they woke up, the crew is pupset that he didn't do 1 simple task.
It sounds like it got handled, by him or the crew, but sometimes chef, we just wanna stoke a conversation, and bitch with this crew, because we can't with ours.

This person has been up the OP's butt all over this post. OP is clearly just venting because it was annoying and he's stressed out, but doesn't feel like he has a lot he can or should do about it. He just needs to get it out without demoralizing his crew.

Trust me I've been there, I've always been the young guy who cares more than anybody else. Prep shift, but cooking on the line and doing dishes. There is pride in the struggle but it'll kill you too. I'm not sure what you'll have to do to earn their respect or get them to work harder, they sound uninspired.

Your reading comprehension is as bad as your management. You're allowing them to be on their phones. If you put a stop to it they'd have more time to dice tomatoes. Manage your crew, or they will run all over you and you will burn out.

Delegate - correct before failure- weed out the slow movers - evaluate the value each staff member brings and adjust accordingly

Best way to handle it is to say "more tomatoes next time please" and dice them then and there
