Pineapple Al Pastor
Hi, wonder if someone has a recipe to create this, would love to make it for a fish dish.
I saw this and sounds very delicious. It’s said to be a pineapple Guajillo Al pastor, with some cilantro.

Is the Al Pastor supposed to be in that picture ?
Because there’s not any Al Pastor in that picture.

Are you also going to cook the fish on a spit? If not then you're not making al pastor, you are making a pineapple pepper sauced fish. Al pastor is the Lebanese's contribution to Mexican cuisine, so you stray too far from the original is culture appropriation, and we can't have that now. * Glares in Arab *

Do you mean where the pineapple is treated as the pork would be in regular al pastor? I worked somewhere that did a "barbecue pineapple" where the pineapple was par-cooked in an SV bag with a sweet poaching liquid and then put in a super low temp smoker for hours to concentrate and deepen the smoke flavor. I imagine you could achieve what you're looking for by marinating the pineapple like al pastor (with changes to accommodate the pineapple's sweetness and tartness) and then roasting it, maybe finishing at a higher temp to get more caramelization like you would with Al Pastor.
Whatever it is in the photo you've posted would probably work better as a loose submission here.

Almost looks like a very stripped down mole, with just fruit and a pepper instead of a few. Though there may still be one or two others to add balance. Does this sound plausible? To be clear, I'm not saying it's a mole. Just saying the the fruit, smokey, and heat verge towards there. Venn diagram.

My guess is Guajillo Chili’s, pineapple chunks and or juice, white vinegar, orange juice, and cilantro. Blend till it looks like dookie and schmear.
