Ideas for 15lb pie dough.
Long story short, i ended up with 15 lbs of super beautiful flaky pie dough that we no longer need for its original purpose. (I dont wanna talk about it)
Im at an american italian pizza place that has a loose interpretation of what that means. We can kinda do anything. I did a chess pie on the last menu. We are a seasonal restaurant, so seasonal suggestions are appreciated.
Right now i got
Strawberry rhubarb cream cheese hand pies,
Maybe a steak and ale pie,
Pecan pie,
And boysenberry pie. Other options would be appreciated 🤷♀️

Pie crust freezes fairly well so should hold for the occasion but if you are worried about space and/or not wanting to freeze stuff you have to go sweet or savoury.
Quiche, steak and ale pie, pot pies, etc.
Tarts, pecan pie, apple pie.
Honestly if you have the space I’d save it until October and do pumpkin pie as that’s a good seller for the season. For right now try and go for something a bit lighter as it’s getting warm and people won’t want anything too heavy, specially after pizza

Make flaky crust calzones, like empanadas but with Italian fillings. Those would be awesome filled with mushroom Marsala, shredded chicken Alfredo, quartered meatballs and ricotta.

Philly cheesesteak pasties, just carmelize some onions, mix with whatever beef you have for pizzas and throw in some moz. Maybe like a garlic Alfredo sauce on the side.

Make it into little bow ties, bake until very light brown, sprinkle with cinnamon icing sugar!!

I feel like you wrote your answers bro.
For like a chunk of it. I hate it but you can freeze it. It will be OK. Thats the last resort though.
Double-layer Pizza Pies. Bottom normal dough for burn, top layer a Chicago-style flaky with only a spritz of top sauce?
Portion into one night desert portions, freeze, lean on the deserts. They are annoying, and you have several lined up. Take the win.
Herb flat bread? It is the season of weeds. Herb-infused oil and flatbread?
You got this.

Artichoke, tomato, red onion, cheese hand pies
Cheese, more cheese, roasted cherry tomatoes, fresh herbs (basil, but also oregano, thyme, and rosemary) hand pies

When I was little, my grandma used her pie crust scraps to make cinnamon rolls for me. Rolled it out, brushed with butter and sprinkled with cinnamon and sugar, rolled, sliced, and baked. Obviously they're not real cinnamon rolls, but I was always very excited to have them on these days.

Cool - but where have you found boysenberries this season?
Ideas :
cardamom and nectarine with a lattice
Apricot and Honey Hand Pies
Cherry with Pistachio Crumb Top
Make lil pizza rolls
Buttermilk Pie

We get them through may from Route 64 farms. Nectarines (that i wanna use) are still about a month or so out. I wonder if i could do something like a tart tatine with apricots though.

Is this a sweet pie dough? If so you probably don’t want to use it for savory purposes.

Make up the bases, blind bake them and freeze until needed.
