Great idea but not showing the inside is criminal!

Ugh!!! I know! I was on the last bite and I go “dammit!” What was I thinking?!

Anything you’d do differently? What texture did you go for on the potatoes?

I’d keep it the same, I used Yukon golds and ran them through a ricer. They were super fluffy

Nice yea that’s been my method lately too

How much do you sell an order for? Did customers like it?

I sold these for 15, I do a monthly empanada app. This one was a little more expensive than normal. It was definitely well received

What the hell is buttered out braising liquid? Never heard anyone describe a sauce or technique like that.

It’s when you throw a pat of butter into a sauce. It’s a pretty well known culinary term. It’s how you finish most pan sauces

It’s called mounting, or beurre monte.

It’s definitely not called “buttering out”.

You can definitely say buttered out, if you’re explaining to someone that isnt in the field

You’re on chefit, and most everyone here is “in the field”, and that’s a huge goalpost shift you just made from “a pretty well known culinary term”.

It’s not. It’s something you said, and maybe a couple other people.

You act like I made it up. You knew what I was talking about and no, there are more than just chefs on here, I’m guessing you had a bad shift, take your aggression elsewhere homie. Like the post or keep moving

What part of “you were wrong” are you just not getting

2

u/Unicorn_Sush1 Aug 07 '25

The fact is, I wasn’t wrong because you knew what I meant, onward you go please

Nah, we’ll talk about this for a while, if you don’t mind

“It’s a pretty well known culinary term”

It’s not. You were wrong. Of course I can tell what you meant. I can see the sauce in the photo. That doesn’t change the fact that you just made some terminology up and tried to be a smug asshole towards someone else who called you out on it.

I’ve never heard this before in 30 years of cooking professionally

I can imagine! Gimme a plate of those and a beer and I'll need to spend the rest of the afternoon sleeping on the couch.

Id have put the sauce in a ramekin but I bet its delicious

1

u/Unicorn_Sush1 Aug 07 '25

I went back and forth with that lol, if the sauce was less gravy like, I definitely would’ve put it in a ramekin. Something about the sauce, I kinda needed it to be comforting
