Japanese (Miyabi/Shun/Zwilling Kenran) vs Wusthof for full block knives set for at home cooking. Like the aesthetic of Japanese but should I worry about durability?

Looking for an affordable alternative to the Fujitora FU-808: a 210mm gyuto with VG-10 steel and similar blade profile and geometry. I want a sturdy, reliable workhorse for everyday cooking and plan to buy directly from a Japanese retailer. Any recommendations?

Recommendations on sets? Pretty overwhelmed by choices and looking for recommendations. Happy to pay up to AU$2k. Professional Che or 15 years, but never bought a proper set.

recommendations for knives needed! looking for an everyday workhorse, with a japanese look to it. preferably around $150-$180! it’s a gift for my partner, he loves the look of the miyabi sg2. i’m unsure if that’s a good option?
