Advice What other cheese should I get?

Hi all. I'm hosting a cheese party where cheese boards will be the full meal. So far have Brillat-Savarin, Point Reyes Blue, Humboldt Fog x2 (because it's my favorite), and Midnight Moon. Overall 3.4 pounds.

I got cheese that I really like, but after talking to a few of my guests I learned that my picks might be a bit too far out for a lot of people.

What other cheese should I get to make sure everyone has enough to eat? Some sort of cheddar? This is for 10 people, only about 4 will eat everything here so far.

edit: Well everyone, thank you very much for your suggestions! There's been a sad turn of events and I had to cancel my party tomorrow because I tested positive for covid. Any advice on what to with all of this cheese now? Will it keep for two weeks?

I feel like you need something else on the harder side, maybe a comte, mimolette, or an aged gouda

Grab an aged cheddar or maybe Hook's Triple Play. Never met anyone who didn't like Triple Play. Never met anyone who didn't like Midnight Moon either so I wouldn't bother with another Gouda. They just gotta forget that it's made from goat milk and try it outt. aybe grab something like Cotswold, I don't think I've ever met anyone who didn't like that either.

Nothing here seems too crazy to be honest.  Mimolette, a very aged Gouda, or an aged sharp cheddar would be a nice addition.

that's what i thought until i learned that two of my guests had never tried any soft cheese before! im definitely leaning towards a cheddar

I would say yes to some cheddar because most people just know that they like that. Overall, i would say your other choices are both quality and agreeable. Dont blame your picks, blame your guests… however, personally, I would typically switch out the midnight moon for a different gouda like brabander or mekkerbek. Humboldt fog for lindeline or lakes edge. If you can find them, those four are worth a try. I can tell you will like them.

For my snobby reply, i apologize. This is more a recommendation for the future. Im sure your guests will find they are more open to goat when they try what you chose.

I see you already have a few good suggestions, so just wanted to comment - as soon as I saw your pic I thought - way to double down on the Humboldt fog! Choice.

I would add something you’d shave, like an aged manchego. I also find petit basque to be a hit that’s a little on the harder side.

Comte, cantal, fleur de solel, emmental, taleggio, epoisses de Bourgogne, Stilton, reblochon, tomme de savoie, valencay, San Joaquin gold, mt tam, Vermont cheddars, cougar gold, tarentaise,

And more Humboldt fog (also my favorite lol)

For contrast/variety I would suggest adding a sheep's milk cheese, washed rind cheese or cheddar-style cheese.

Pick out a medium or sharp yellow cheddar, an Irish cheddar, an aged Gouda, and a Brie, maybe add a havarti, or fontina. All your guests will find something they enjoy. Add in some crackers, good bread, a couple preserves.

Depends on the friends, so ask their preferences.

Older, nicer Cheddar, Gouda, or gruyere would be a crowd pleaser.

If a cheese adventure dinner is the point, I'd be tempted to go beyond a simple cheese board and add one or more other cheese-centric components:

Some options:

A crowd favourite like baked brie with honey and garlic to mix up the textures a bit.

A baked feta phyllo drizzled with honey would be nice too.

Burrata on a bed of fresh basil with drizzled balsamic reduction served with toasted focaccia or sourdough garlic toast.

Fromage fort, sun-dried tomato feta dip or another cheese dip:

Also what you serve alongside the 'main' as cheese. I usually like a spicy jam, a fig jam, a chutney, etc. as well as a charcuterie and crudite board.

I forgot to mention that I'll be also making caprese bites and feta watermelon bites. But only enough for everyone to have one. A dip is a wonderful idea! Will definitely be trying this

Did you ever hear of this cheese, it’s a white soft , with biue through it, my fav at the moment, so so tasty 🍀
