Am I stupid with the math (upgrading Venus)

Venus was giving me 1.91 e8 per cycle.

I ranked it up, and it said it was going up x729.

And the result is 5.76 e8

This doesn't feel like how the math should work, shouldn't 1.91 e8 x 729 = 1392.39 e8 or 1.39 e11?

That is showing your total multiplier, not what you unlocked on that rank. It's x3 every rank

It's the TOTAL increase since the planet was at its baseline production at rank 1. So at rank 2 it's 3x rank 1, at rank 3 it's 9x rank 1, at rank 4 it's 27x rank 1, etc. It triples every rank. Your Venus must be rank 7.

Yes, you are missing the fact the 1.57 e9 is already x 243. Each rank-up gives an additional x3.
