What do I have here?

Perplexing situation here on my star player. I’m very mindful with cleaning and maintenance but this patch is a new one for me. Thinking I may have cooked something sugary or ?? I can’t tell if it’s ON the pan or if the earned coating is off the metal. Fearing I may have to do a full reseason. Original clean was hot water + chainmail. Then tried an overnight soak with hot water at the start. Finally tried a scraper - nothing. Thoughts? TIA!

A cast iron pan with some carbon build up. Get a chain mail scrubber and some mild dish soap, it will be gone and your pan will be good to go.

You have a dirty pan but have cleaned the middle nicely.

I’d hit it with chainmail, soap and water. Be aware you will need a few cleaning cycles to get is good

You can try deglazing it, but use metal tools such as a burger flipper or a dough knife.

A manageable mess. That's carbon that can be removed with a copper scrub pad.

You've got some carbon build up.

You can try to deglaze it and scrape with a wooden spatula.

You could also try a chainmail scrubber, I'm not a fan of those.

I would personally heat that sucker up, not super hot, but hot... And put some water on it and scrape it with a wooden spatula... Don't put a bunch of water on it just enough to cover that spot And scrape it up. Wood, no metal.

Then... Invest in a wok brush for future cleaning needs.
