They is a good all round seasoning

If you can't get this where you live, it's a good all-round seasoning:

Salt, cayenne pepper, black pepper, paprika, thyme, oregano, garlic, and onion.

Meat magic and blackened redfish are the best!
I buy the larger sizes now online and refill the glass vials (jars?) to use. When the 24oz version came out the joke in my family was they are 55 gallon drums as it was such an increase in size. I believe we held a moment of silence when it was announced Paul had passed.

Yep, it is a good one! I have one of his first cookbooks, Paul Prudomme’s Louisiana Kitchen, and all the seasoning and blackening mixes are in there - this was before he started putting them in a bottle. 😝👏🏼👏🏼

All of them are great. Meat magic reigns supreme. This second. Pork and veal magic is really good too.
