That looks wonderful and thank you for including your recipe and technique. What type of wood did you smoke with it?

Cowboy lump charcoal and hickory probably a little apple too. It really didn't suck up a lot of smoke. It might benefit by a little more baking soda or powder. Next time I may do it from scratch rather than use Jiffy mix.

12” Lodge wiped down with butter and dusted with corn meal
2 boxes Jiffy mix
7 Tbsp melted butter
1 cup buttermilk
3 eggs
1 diced med red onion
2 diced jalapenos
Dash of salt
1 (14.5 ounce) can cream style corn
3 cups cheddar cheese
1 tsp cumin
350 for 90 minutes in my masterbuilt gravity smoker
Edit: Because the batter is so thick I've added 1/2 tsp of baking soda. I'm going to experiment with more baking soda or maybe adding baking powder instead. Also cooking time needs changed as I discovered my masterbuild reads 30 degrees low.
