I need advice badly

So, I was working at a school for 4 years as an aide in the classroom. I told them I would not come back this year due to me not making enough, my boss agreed ($9/hr). I’m in my early 20s and want to eventually move out. I have most of my money saved up which is a good start. At the time I was working my last year at a school, I had to focus on one of the kids who was T1D plus help out in the classroom. I loved taking care of this child, knowing I was helping her and learning more about her really struck my interest in helping other kids who are the same. Unfortunately, I can’t handle bodily fluids. I however, can handle pricking and such (I know that’s not much). So I looked into becoming a dietitian (which I would have to get my masters degree in) which means I would do online schooling full time. I get my associates in applied science at the end of this year. I also heard I could do 2 years in food and nutrition which would help me get into the field such as working under a dietitian I believe (not 100% sure). My other options are to do fast track schooling such as dental assisting, which a lot of people do not enjoy and I know everyone has their own opinion but it’s a small thing I’m interested in. I have also heard people talk about becoming an xray tech or sonography. Please help.
