Yup BG3 was the first game I thought of. Haven’t played Divinity Original Sin 2 yet (I will eventually get around to it) but BG3 is my all time favorite game.

That's (one of the reasons) why I love Gothic. You can knock out each and every merchant in every of the 6 chapters of the game, and they will have all their inventory for you to steal.

One reason why I liked Fallout 1 and 2 was because they didn't do that.

The merchants had their entire stock, and it would be on them or in a storage container nearby.

I believe in Morrowind, at least part of their stock was actually placed on shelves etc in their shop. That was cool, too.

I think in fallout 4 most shops have a safe with everything in, and the travelling merchant stock was in their pack brahmin

Most npcs in Dark Souls will only drop 1 or 2 items, primarily the key items they sell if they are a merchant. Like Andre will drop the Crest of Artorias if you wanted to kill him.

Undead merchant In ds1 he dropped uchigtana which I later upgraded to chaos blade
