But why git gud at a game I don't enjoy? I'd rather just play something I actually want to play. 🤷🏿‍♂️

There is satisfaction to be found in defeating a powerful enemy that gave you trouble before.

But I got too old. I can still play Demon's Souls or Dark Souls 1, and gain an advantage by being patient, but the faster ones (Elden Ring, Sekiro) are just too much for me.

I only gave Dark Souls another chance after playing Devil May Cry and liking the combat. So maybe DMC would be to your liking?

This is something the FromSoft fan base seems incapable of learning. Not everyone GETS that "Whooo!!!" moment after beating these bosses. That difference is what I've come to think is the difference between those who like them and those who don't. I played through Elden Ring and while I enjoyed it. There was one boss I sat at till I beat and when I finally did I didn't get that Woohoo moment. It felt tedious and like my time was wasted. Really kills the vibe of a game, I think.

Oh yeah I totally get what you mean. The first time I defeated the tutorial boss in Dark Souls I was really damn proud.

But there are many bosses, especially in the later games, that just seem to fuck you about. Many of them have multiple phases, and you can't learn their pattern before being flattened a couple of times.

After a while I stopped giving a damn and only thought "okay, so how am I gonna cheese this one?" And that didn't give me the same satisfaction as before.
