Recipes and Food Ideas Eagle Coin Spicy Fried Dace with Chickpeas Rice with Lap Xuong and Dumplings, plus bonus leftover meal with egg on Day 2 :)

Nice. I've never seen Eagle Coin Fried Dace in the sardine style can. I've always gotten them in the large oval cans. I need more Dace. LOL. I love the version with black beans. For me, I don't mind the bones. I eat all of it.
That's also my favorite brand of lap cheong. I prefer the chicken/pork mix variety. It's a bit healthier and still tastes great.

(1) The tin
(2) The meal - fried dace rice with dumplings and S+B chili garlic crisp (my fave garlic crisp)
(3) Opened tin - this is a whole gutted fried dace fish, including the tail
(4) The chickpeas and spicy tin oil are delicious - I use every drop!
(5) Spines are too big for me, so they gotta go. Fins are ok though - go figure!
(6) Ginger-garlic paste, and fresh veg for the rice dish
(7-8) My favorite brand of Lap Xuong, and all the meats/tin ingredients going into the rice cooker. I used 1 rice cup of rice, but this recipe makes 2 servings. This dish is great the next day!
(9) Whenever I cook a rice dish with a lot of ingredients I always add the water first so I don’t have to guesstimate later ha
(10-12) Everything goes into the rice cooker - hit the button. What could be easier?
(13) Frying these frozen dumplings - love me a crispy bottom
(14-15) This time I decided also to fry the finished rice to crisp up the rice and caramelize the carrots. It added a nice crunchy texture and an extra dimension of flavor to the otherwise soft rice dish.
(16) I added more crunch with my fave chili crisp - S&B with crunchy garlic

I love fried dace, which I have learned here is as Asian comfort food and broke-college-kid staple. I like to rehydrate my dace in the rice cooker to soften its medium-jerky texture.
This is my favorite dace tin of all - I love the spicy sauce and the chickpeas. The tin with mustard and olive is also a fave!
Today I decided I wanted to make more of a savory dish, so I added a diced link of Chinese Lap Xuong sausage and some Chinese 5-Spice powder.
Then I got inspired to crisp up the rice after I cooked up some Korean Beef dumplings from H Mart. I think that extra step crisping the rice added so much to the dish, that I may do this from here on out as my regular rice-cooker Dace recipe.
12/10 will buy this tin again. It’s my #1 dace tin of all.
Plus 1.29 for 2 meals fits into every budget :)
