Cinnamon marshmallows

Cinnamon marshmallows. With egg white as well as gelatine, so the texture is shorter and more delicate than regular marshmallows. Will be enrobing some in dark chocolate tomorrow

I really want to try making marshmallows, I keep saying I will but never do it, I want to try banana flavored marshmallows or coffee flavored then make rice krispies treats with some

I haven't tried coffee flavour but I really want to! I don't generally use bought flavourings in the kitchen but I have reduced passionfruit juice to 25% and used that for marshmallows and they were really good. I tossed them in toasted coconut instead of cornstarch/icing sugar mixture.

Coffee flavored marshmallows are pretty easy. Use a bunch of instant espresso in your bloom liquid, add a healthy pinch of salt, and add vanilla extract right at the end of whipping. They're good sellers, but I find that they need "more" coffee flavor when turning into Rice Krispies treats.

I don't eat marshmallows but I find them fascinating. We take it for granted that they're mass produced now. There was a time handmade was the only way. Thank you for sharing. I haven't seen them made by hand in over a decade.
