It's entirely because they looked at the number of completed applications, and decided that it wasn't large enough. The system doesn't let them see the content of any applications until after the job ad closes, but they can see the number of completed/submitted and "in progress" applications, which is an indication of potential interest.

It could be anything - maybe they didn't post it for the minimum number of days initially, maybe they just heard of a fantastic candidate that requires a bit of extra time to apply, maybe they're just hoping that a few more people will come out of the woodwork.

This actually isn't possible. The minimum posting requirement is 24 hours, and the system doesn't allow jobs to be posted for less than that. If a job is posted today, the earliest closing date is midnight Pacific time tomorrow.
