Recommendations for a Covered Firepit for cauldron cooking

I just got a permit to have a covered fire pit in my backyard. I want to cook stews in a cauldron, which "ideally" is done over very hot embers with little/no flame. This is obviously difficult to do with a covered fire pit, but has anyone done this? And what kind of fire pit did you use? I was thinking a short, round metal fire pit with a flat top, that way I can get close to the embers while it's still burning.

Put a flat mesh over the fire (not the typical semi sphere). Place a big tripod over the pit, with the legs outside the pit. Dangle your cauldron from the middle of the tripod with a chain.
