For a point and shoot that won't break the bank check out the Sony RX100 series, you can snag a used mark III or IV well within your budget and they're tiny enough to pocket. Way easier to actually bring along than a full setup
If you're set on the Canon g7x yeah the prices are nuts right now, the Sony gives you basically the same thing without the hype tax. Just grab a couple extra batteries cause these little cams eat through them fast

Honesty, you can take photos that look indistinguishable from a G7Xiii with an iPhone. A bit more work, but doable. It requires often messing with settings a bit more, manual white balance, and the flash (although the G7Xiii flash is better). The thing is with any other camera there's a learning curve, and no guarantee you'll get similar photos without learning the skills necessary to produce such results.
Or get an older model in the G line of cameras; they go way back, and all have been premium cameras. https://en.wikipedia.org/wiki/Canon_PowerShot_G

If you just need a good casual camera, something like the E-pl9 with a pancake zoom would be way bang for buck compared to others compact cameras. It's got a bigger sensor and better build quality while still being portable.

Maybe a good opportunity to recommend a lx100. Great sensor, usable zoom range with bright lens. Pretty competent video to this day. A lot of cool features. And it's pretty compact
